As regards cattle raising, the zone has the second largest herd, equivalent to 7.8 million head of cattle, or in other words over 2 per inhabitant.

Pigs are also found here with 490 thousand total heads, a figure that places Cordoba as the second largest producer after the province of Buenos Aires. The main destination of this meat is for the production of delicatessen, cold cuts and sausages. There are 38 establishments registered for the slaughtering of cattle, 29 for pigs and 11 for suckling pigs. Of those, 11 meat packing plants are in conditions to produce meat for export and of these, 4 are qualified to meet the Hilton quota. Together the slaughterhouses are capable of processing 1.3 million head of cattle annually, representing 9% of the national total.

The slaughter, processing and conservation of the beef generate approximately 17 million dollars per year and about 7 million dollars for the elaboration of cold cuts and sausages.
